Winter harvest cooking

My Savoy cabbage are ready to harvest while I still have leeks growing from the summer crop. These cabbage I grew without using pest sprays or chemical fertilizer, I just diligently hand preened any grubs that I saw. Leeks are a great pest free vegetable to grow and can sit quite happily in the ground until you’re ready to harvest them.

Cabbage Leek Potato Soup

So I got a little creative and just threw together the following and made a delicious soup.

1/2 Savoy Cabbage chopped into long strips

1 large leek chopped

1 potato chopped into small cubes

1 clove of garlic chopped

1 vegetable stock cube

1 brown onion

3-4 cups of water

pepper and salt

1 Tbl spoon Extra Virgin Olive oil

Fry all the veges and oil together for 5 minutes the throw in a crushed stock cube, water, pepper and salt and let simmer until potato is soft.

Eat with a big slice of fresh rye sour dough with a generous smear of real butter ontop. YUM!
